Nama Shoyu has a rich, full-bodied flavor and an exquisitely delicate bouquet, plus healthful living enzymes and beneficial organisms like lactobacillus. Ohsawa Nama Shoyu is naturally aged for four years in cedar wood kegs; it is made in the time-honored traditional way,

Ingredients: Organic whole soybeans, mountain spring water, organic whole wheat, sea salt.
Contains wheat.

Note from Rhio: Nama Shoyu is a product that is not raw or perhaps it can be called half raw. The ingredients are cooked and then allowed to ferment. The fermentation process creates many nutrients, such as enzymes and lactobacillus. After fermentation, the product is not pasteurized. That is why it is called raw or unpasteurized.
