naturally aged for four years in cedar wood kegs; it
is made in the time-honored traditional way,

Shoyu is a product that is not raw or perhaps it can be called
half raw. The ingredients are cooked and then allowed to ferment.
The fermentation process creates many nutrients, such as enzymes
and lactobacillus. After fermentation, the product is not pasteurized.
That is why it is called raw or unpasteurized.
