Ursula & Jerry Horaitis
I (Ursula) was born and raised in Furtwangen/Germany. A historical village of famous Black Forest Clockmakers with the well known Clock Museum (Furtwanger Uhrenmuseum) and of course its famous Cuckoo Clocks.
My love for tastebud-spoiling food started in my childhood. I learned a lot from my Grandma and loved to go with her and my Ma into the forest for blueberries, raspberries, cranberries, herbs and mushrooms full of secrets. The forest, fields and our vegetable garden were my playgrounds.
At the time when Pizza, Pasta, Parmeggiano, Pecorino, Mozzarella and Prochiutto were still strange words in our country, my Italian step dad and his family taught me how to prepare mouth-watering Italian and Mediterranean dishes.
After I studied Trade, Business and Economy, I then studied Nutrition and Agriculture. My interest not only for healthy eating but for also living in a healthy environment lead me to learn about designing and creating buildings that combine environmental-friendly and healthy materials like wood, steel, glass, insulation, solar techniques and other natural sources for heating and cooling systems.
I moved from the cold Black Forest to the warmer Rhine River area and the romantic city of Freiburg with its famous wine route through the wine areas of Breisgau, Kaiserstuhl, Markgräflerland, Ortenau and Alsace in France. In many of the over 1400 year old little wine villages I got to know many excellent high-end gourmet restaurants.
Next to my work in creating "healthy" family homes and office buildings, in my free time I developed nutritionally healthy and delicious recipes and meals. Whenever there was a company or private party for friends, I prepared elegant gourmet dinners and buffets.
To find out about all different kinds of diets, I probably tried most of them. Starting with the Atkins diet, to an egg diet and a pineapple diet to Fit for Life and many others.
With travelling later all over Europe, parts of Asia, Australia and Africa I fell in love with South Africa, "One World In One Country". It is the most beautiful country I have ever seen. And so I learned more and more about food preparing with natural ingredients.
Coming to California in 1999, I met and got to know my husband, Gerry. He introduced me to raw food, Growing up on a 30% to 50% raw diet with vegetables, fruits and nuts but more in the form of a mono diet, as a curious person who loves excellent food I was challenged to combine raw foods based on my "traditional" German, Italian, French and Swiss recipes.
Based on all the encouragement of our Raw food friends from LA, I now prepare raw food dishes as Take Outs for our customers and for all kinds of special events. From a small menu for family events up to elegant buffets for big celebrations.
Our cookies and crackers are sold in several health oriented stores. In August we started to sell our products in Farmers Markets.
Currently we are working on our plan to open up a Raw Food Cafè to spoil the tastebuds of people who enjoy experiencing gourmet food "from the finest".
We are preparing to publish our new raw food recipe book, probably in summer 2003.
