Either way will work. If you measure and then sprout you will have more sprouts
but that is ok. There are many different ways to make the Rejuvelac. If that
way works better for you and you get the Rejuvelac flavor the way you enjoy
it, then do it that way.
When I wrote the recipe for the book, I based it on the way they were doing
it at the Ann Wigmore Institute in Puerto Rico. Perhaps because they've got
a tropical climate, they can use less sprouted grains and still get a good strong
Rejuvelac. Although I measured everything to make sure the recipes for my book
were easy to duplicate, when I make recipes for myself I usually don't measure,
so it could be that when I make the Rejuvelac for myself I am using more grains
too.
